LASAGNA WITH CHICKPEAS (ciceri and tria)

Famous Salento soup. The term TRIA is nothing more than the transformation of the Arabic word ITRIYA which means vermicelli. The principle of this dish is to combine the fried lasagna with chickpeas.

DOSES FOR 6 PEOPLE

  • 300g of lasagna
  • 300g of dried chickpeas
  • half a tablespoon of baking soda
  • 1 onion
  • 1 clove of garlic
  • a stick of celery
  • 2 or 3 cherry tomatoes
  • a sprig of parsley
  • a bay leaf
  • olive oil
  • Salt and Pepper To Taste

After soaking the chickpeas in cold water for one night, with half a tablespoon of baking soda and a little coarse salt, drain them, wash them well and cook them in an earthenware pot (alternatively a normal steel pot will also work. ) with plenty of water, salt, a clove of garlic and a bay leaf, onion, celery and parsley and the tomatoes without seeds. If you need to add a few more ladles of water during the cooking time. Meanwhile, fry half the amount of lasagna cut into squares and cook the other half al dente in boiling salted water. Finally, when all the ingredients have reached their cooking, combine the boiled pasta with the fried one and the chickpeas deprived of odors and almost all the cooking liquid in a pan.
